It’s that time of year; Halloween will soon be upon us, and Thanksgiving is around the corner. Now is the perfect time to indulge in all things pumpkin, including some soft, fluffy pumpkin muffins.
I’m not a baking “purist” – I think that, for some recipes, it’s completely fine to use store mixes. This recipe is one of them.
- 1 box of Trader Joe’s Pumpkin Bread & Muffin Mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup water
Heat oven to 400°F.
Combine eggs, oil, and water in a medium-size bowl.
Add 1/2 of the mix, and stir well.
Add the other 1/2 of the mix, and make sure everything is blended well.
Pour mixture evenly into 12 muffin tins.
Bake for 18-20 minutes.
