One Thousand and One Coconut Bites

I recently discovered the delicious concept of “coconut bites”, and I set out to create my own spin on the sweet morsel. I’ll spare you the long story and skip right to how to make it:


  • 2 eggs
  • 1/3 cup butter
  • 1/3 cup sugar
  • 2 cups coconut flakes
  • 3/4 cup flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder


Melt butter in a microwave.
Cream butter and sugar together, until well mixed.
Add eggs and mix.
Add in coconut flakes, one cup at a time.
Finally, add in the flour and mix well. Your batter should be fairly thick, but not doughy.
Line a baking tray with wax paper, then use a teaspoon to scoop little “balls” of mix onto the paper. Position the coconut balls 3/4″-1″ apart from each other.
Cook for 10-12 minutes at 350F.
(Makes two dozen coconut bites)

These coconut bites have just the right amount of sugar and coconut for sweetness, balanced with a fluffiness from the flour and baking powder. Try them out – you just might fall in love!
